Veggie Recipes Come Alive
Veggie recipes were an unknown at our house, but four years ago, our daughter, Jordan, returned from college to inform us that she had decided to follow a vegetarian diet. Because this was new to our family, we had to make some lifestyle changes, but it was easy because we'd already been cooking with the delicious Coyote Trail products. They are low carb, low fat and all natural, so making the choice to skip meat was still ok, as long as we had the flavor profile of our favorite sauces.
Coyote Corn Dish
INGREDIENTS 2 c. frozen Corn (rinsed) or fresh Corn right off the cobb 1/2 onion diced 3 minced garlic cloves 2 Bottles Green Chile Sauce 1 c. New Mexico Green Chiles 1 bunch cilantro roughly chopped 1 lg. can chopped olives 2 doz. white corn tortillas 1 lb. Monterey Jack cheese
Saute onion in 1 Tbs. olive oil Add garlic, saute 5 min Add Green Chile Sauce Cook on low 10 min Spray and heat a 9 in nonstick pan Add the corn and roast it. Keep tossing it. Be careful not to mush it. It should be quick and fast. about 5 min Let sauce cool, add the chopped green chile and a handful of cilantro Lightly cook your tortillas over an open flame Dip tortillas in cooled Coyote Trail Green Chile Sauce Lay on a plate, stuff with corn,olives, cheese, cilantro and a few tsp. of sauce Roll and place in sprayed baking dish, not layering them Add the leftover sauce and cheese
Bake 350 for 15-20 min. Remove from oven, top with remaining olives and cilantro Serve with beans and spanish rice

Old Town Salsa or Green Chile Sauce?
It's a toss up, but personally, I like this eggplant recipe with the Green Chile Sauce which blends perfectly with the melted cheese. This dish is nice and garlicky which is offset with a strong Lancashire Cheese.
Many of our customers have written in to tell us they love the Old Town Salsa smothered on top of this scrumptious eggplant. I agree, but I like the salsa warmed up before pouring it on!
