Slow Cooking Recipes
I never appreciated slow cooking recipes until I started a family. It got even tougher after the kids started in school and then came after school activities. We were exhausted and the thought of coming home to cook a meal was less than exciting. Not satisfied with traditional slow cooking recipes, I've taken recipes from my grandmother's kitchen and adapted them to the crock pot. If she were here today, she'd never believe how terrific albondigas can turn out.
Albondigas
INGREDIENTS
2 lbs. lean hamburger 1/4 cup breadcrumbs 2 carrots finely chopped 2 celery stalks sliced 1 med br onion chopped 16 oz Coyote Trail Enchilada Sauce 1 egg 1/2 cup long grain rice 14 oz can whole tomatoes 3 (14 oz) cans beef stock
In mixing bowl Add hamburger, breadcrumbs, carrots, egg onion, and Enchilada Sauce Form by hand into small meatballs NOTE: Can be made ahead and refrigerated
In a Slow Cooker Add celery, tomatoes, stock, salt and pepper to taste Gently add meatballs and cook on low for 6 hours
Serve with rice, beans and warm tortillas Serves 6 people

Coyote Garlic Chicken

INGREDIENTS
1 small, whole chicken 30 cloves of garlic Good News-Don't peel the garlic.
Clean and dry chicken
Place garlic under skin around entire chicken Rub entire chicken with generous amounts of Coyote Trail Adovada Sauce
Place in Crock Pot on low for 4 hours Drain fat and pour remaining Adovada Sauce over chicken cook for 1 hour
Serve with white rice Note: Garlic will slip out of skin and is excellent on pita chips.
