Scoville Scale
What does the scoville scale have to do with green chile? Wilbur? You got to be kidding me...That's right Wilbur Scoville, a chemist developed a way to measure the heat in chiles, a measurement thus and appropriately named the Scoville Scale.
The higher the number, the hotter the chile. Hint--a Bell Pepper is near zero and a Habanero is near the top at 70,000 scoville units. The newly found

is off the charts and chile heads across the globe are scurrying to plant and taste it. most are not having any luck because it's extremely difficult to keep alive. Might be too hot!
Don't Worry About The Seeds
Seeds won't alter your scoville scale readings. That's because there is very little heat in chile seeds. If you want the heat, look in the white part of the chile where the placenta and the chile wall meet. These white veins have an oil called capsicum and this area is also where the oil is extracted for all sorts of items.
I learned the hard way during my trips to Hatch If this area is golden-the chile will be blistering hot. Watch out.

NuMex Conquistador Very mild New Mexico varietal, more like a paprika. About 500 scovilles
Big Jim Can grow to about 10 in in length-ideal for chile rellanoes. About 2000 scovilles
Sandia My favorite! It has about 5000 scovilles and great flavor
