INGREDIENTS

2 bunches spinach, stems removed
1/2 cup chopped pecans
1 med Mango, chopped
1 small chopped shallot
1 tsp dijon mustard
Salt & pepper to taste
1/4 cup Coyote Trail Garlic Chile Marinade

Wash and dry spinach
Tear leaves into mixing bowl
Add remaining dry ingredients

In separate bowl
Add dijon to Coyote Trail Garlic Chile Marinade
whisk thoroughly and drizzle over salad

Coyote Black Bean Salad

I love a black bean salad and as the warm weather mounts, I like to eat lighter. Skip the french fries and toss the fat laden potatoes.

INGREDIENTS

2 cups canned & rinsed black beans
1 med avocado, chopped
1 cup tomatoes, chopped
Juice from 1/2 lime
Salt & pepper to taste
2 Tblsp minced onions
2 green onions, sliced
1 roasted & chopped red bell pepper
5 sprigs cilantro chopped
1/4 cup Coyote Trail Garlic Chile Marinade

In a mixing bowl
combine all ingredients except avocado
refrigerate for 30 minutes
Add avocado
Adjust salt & pepper
Serve immediately
