Old Town Tortilla Soup
Easy and Flavorful Soup Your Family Will Love
2 boneless chicken breasts, sliced thin Salt & pepper to taste 2 teaspoons butter 2 tablespoons olive oil 28 oz chicken stock (homemade or low sodium) 2 cloves garlic, minced 1/2 teaspoon cumin Juice from 1 lime 1 can chopped tomatoes (14 oz) 1 bottle Coyote Trail Green Chile Sauce
4 corn tortillas, sliced thin 1 sliced avocado 8 oz. Monterey Jack cheese, shredded 1/2 cup cilantro, chopped
Salt & pepper chicken. Melt butter in dutch oven, add chicken and brown over med. heat. Add chicken stock, garlic, cumin, lime juice, tomatoes and chile sauce. Cover and simmer for 20 minutes.
In separate pan, heat olive oil and fry tortillas. Remove to paper towel to drain.
Ladle soup into bowl and garnish with cilantro and avocado wedges. Add tortilla strips. Serve with salad and warm tortillas.
