Coyote Cordon Bleu

INGREDIENTS

2 chicken breasts pounded flat
2 tblsp olive oil
2 thin slices provolone cheese
2 thin slices Black Forrest ham
10 crimini mushrooms
1 garlic clove minced
16 oz Coyote Trail Green Chile Sauce
Salt & Pepper to taste

In pan add half olive oil and garlic
Slice mushrooms thinly and saute until soft
Set aside, keep warm
In same pan, add remaining olive oil
Brown chicken breasts over high heat
Reduce heat and layer as follows:
Coyote Trail Green Chile Sauce
Black Forrest ham
Provolone cheese
Cooked mushrooms

Cover on low heat for 10 minutes
Serve with a Green Salad
Serves 2 people

Garlic Chile Shrimp & Tomatillos

How about something a little different? Shrimp, garlic, tomatillos and green chile sauce make a terrific combination.

INGREDIENTS

1/2 lb large shrimp, cleaned & peeled
1 garlic clove minced
6-8 tomatillos cut into bite sized wedges
3 green onions sliced 2 in long
3 tblsp olive oil
1/8 tsp thyme
1/8 tsp ground oregano
8 oz Coyote Trail Green Chile Sauce
Salt & pepper to taste


You need 2 bowls for this easy meal

In bowl #1 toss the following
Tomatillo wedges
1 tblsp olive oil
Salt & pepper to taste

Immediately grill over med heat on barbeque
You want a quick char effect on tomatillos
Return to clean bowl and cover

In Bowl #2 toss the following
Shrimp
1 tblsp olive oil
Minced garlic
Green onion

Grill shrimp and onion mixture on low heat barbeque
Shrimp should take about 2 minutes per side

After cooking, add shrimp onion mixture to Tomatillos
Heat Green Chile Sauce for 30 seconds in microwave
Add sauce to mixture and serve.

Serve with warm tortillas
Serves 3-4 People
