Green Chile Sarsa

I absolutely love green chile served with grilled meat. And yes, my ancestors called it "Sarsa". Flank steak is my choice because it is a challenging steak to cook and it holds up well to green chile. Make sure you cut the meat across the grain after you grill it. Smother some green chile on top and serve with warm tortillas.

Ingredients
2 qts water
10 fresh tomatillos
1 1/2 lb Hatch Green Chiles
1 lb chopped serrano chiles
1/2 bunch chopped cilantro
2 garlic cloves, minced
1 br onion, chopped
Salt & pepper to taste
Juice from 1 lime
Pinch oregano
Pinch cumin

Boil water and add tomatillos for 5 minutes
Remove and cool
In blender add all ingredients
Salt & pepper to taste
Serve over steak, best the next day


Grill Red Chiles

Why would you want to add red chiles to your salsa?

The reason is to counterbalance the acid without adding something totally unacceptable like sugar.

Red chiles really start out as green chiles, but the longer they stay on the vine the sweeter they become.

This transformation with green chile is a good thing for people making fresh salsa recipes because it gives salsa a more complex flavor.

It may also be one of the reasons that people of the state of New Mexico usually can't decide which chile sauce they like best and so they order their food christmas style.


Coyote Salsa

This authentic salsa recipe uses the roasted flavors from green onion and the red chiles. It also incorporates the amazing flavors of the green chile from southern New Mexico.

Hatch green chile is recognized as the best in the world, both for its flavor and heat.

INGREDIENTS
6 red chiles roasted & peeled
1 lb Hatch Green Chiles
3 green onions roasted and chopped
1 ripe tomato chopped
1/8 tsp cumin
Salt & pepper to taste
Pinch dried oregano
Juice from 1 lime

Blend or leave chunky, but refrigerate 2 hours before serving
Serve with Blue Corn tortillas
