I absolutely love green chile served with grilled meat. And yes, my ancestors called it "Sarsa". Flank steak is my choice because it is a challenging steak to cook and it holds up well to green chile. Make sure you cut the meat across the grain after you grill it. Ingredients 2 qts water 10 fresh tomatillos 1 1/2 lb Hatch Green Chiles 1 lb chopped serrano chiles 1/2 bunch chopped cilantro 2 garlic cloves, minced 1 br onion, chopped Salt & pepper to taste Juice from 1 lime Pinch oregano Pinch cumin
Boil water and add tomatillos for 5 minutes Remove and cool In blender add all ingredients Salt & pepper to taste Serve over steak, best the next day
