Grilled Mahi-Mahi Tacos
INGREDIENTS
1/3 lb boneless mahi-mahi Salt & pepper to taste Pinch shredded cabbage 2 corn tortillas steamed Lime wedges Coyote Trail Green Chile Sauce
BAJA SAUCE
Added to your Coyote Trail Green Chile Sauce, you can make your own classic Baja fish taco sauce. BAJA SAUCE 1/2 cup mayonnaise Juice from 1 lime 1/4 cup yogurt 3 tsp Red Chile Powder 1/8 tsp cumin 1/8 tsp dill
Mix all ingredients in bowl and refrigerate for 30 minutes before serving. Salt & pepper mahi-mahi and brush with olive oil. Grill approximately 4 minutes ea side over med heat. Cut in strips approximately 1 inch x 3 inches. Place in between 2 steamed tortillas, add cabbage, Green Chile Sauce and/or Baja Sauce.
