Impressive Squash Blossoms

Meals should be healthy and they will be great-if you have the right ingredients.

INGREDIENTS

6 petite yellow squash with blossoms
1 tblsp butter
Fresh herbs, chop 4 leaves of each
Basil, thyme,oregano
1/8 cup white wine
1 garlic clove minced
6 oz Coyote Trail Green Chile Sauce
In a saute pan
Melt butter, add garlic squash and herbs
cook for 1 minute then add wine
Cook for another minute on med heat
Turn heat off, add Green Chile Sauce

Cover for 5 minutes then serve


Coyote Eggplant

INGREDIENTS
4 eggplant of your choice
1/8 cup olive oil
1 egg scrambled
1 cup flour
12 button mushrooms sliced
1/2 cup grated Lankshire Cheese
8 oz Coyote Trail Green Chile Sauce

Cut eggplant
into 1/2 in thick slices
In frying pan heat oil on med
Dip eggplant into egg wash
Then flour mixture
Fry 1 minute ea side
Drain on paper towel

Spray a 9x12 baking dish
add eggplant & sliced mushrooms
Add shredded cheese
Add green Chile Sauce
Bake 350 for 15 minutes

Serves 4 people

Green Chile Corn Chowder

INGREDIENTS

32 oz frozen yellow corn
3 med potatoes, peeled & diced
16 oz Coyote Trail Green Chile Sauce
1 cup cream
1 oz pimentos, washed
Salt & pepper
6 oz Monterey Jack cheese, grated

Use Coyote Trail Hot Sauce for garnish

In a sauce pan, combine everything except cream,Green Chile Sauce & cheese
Cover, cook low for 2 hours
Stir in Green Chile Sauce & cream
Top with cheese after chowder thickens
Compliment with Hot Sauce
