Southwest Gazpacho

Another of our easy healthy meals is Southwest Gazpacho, a liquid salad from the southern Spanish region of Andalusia.

It is made of ripe tomatoes, cucumbers,garlic, peppers, olive oil and vinegar.

This soup is perfect for the hot months as it is served cold.

INGREDIENTS

2 cups peeled & diced cucumbers
1/2 cup diced red onion
1 1/2 cup tomato juice
2 cups diced ripe tomatoes
1 cup roasted & Peeled yellow bell pepper
3 New Mexico Chiles roasted, peeled & diced
1/2 cup red wine vinegar
1/3 cup extra virgin olive oil
4 oz Coyote Trail Green Chile Sauce

Mix all diced vegetables in glass bowl

Add tomato juice,vinegar,oil & chile sauce
Season with salt & pepper
Transfer 1/2 mixture to a blender & coarsely puree (pulse)
Return to bowl, mix well & chill for 3 hours

Serve cold in bowl over sliced & toasted french bread

Beanie Bean Salad

This crowd pleaser is a sure winner if you use the secret ingredient. The low carb award winning, green chile sauce brings together the smokey and earthy flavors of chile with the simplicity of garden fresh beans. Offset it with the red wine vinegar and watch your guests smile at the unique blend of flavors.

INGREDIENTS

2 lbs green beans, stem ends cut
2 lbs yellow wax beans, stem ends cut
1/3 cup torn fresh basil leaves
Salt & pepper
1 tsp chopped fresh thyme
1/2 tsp chopped fresh oregano
1/2 tsp chopped fresh sage
1/2 bulb shallot chopped
2 Tbsp red wine vinegar
4 oz Coyote Trail Green Chile Sauce

Boil salted water in large pot

Add beans and cook 3-4 minutes
Drain and immerse in ice water
Dry completely & refrigerate 1 hour
In large bowl add everything but vinegar
Before serving add vinegar, salt & pepper to taste

Note: vinegar will discolor beans if added too early


Coyote Chicken Bake

Make this Party Appetizer ahead of time and watch your guests rush to the table. Forget that tired and tested ingredient paprika used in most baked chicken dishes.

Instead give your guests a flavor they haven't had before-Red Chile Powder from New Mexico. It'll be a sure delight when used in our famous Chicken Bake.

INGREDIENTS

4 tsp New Mexico Red Chile Powder
3 tsp salt
4 cups corn flakes crushed
4 turns crushed black pepper
1/2 cup buttermilk
2 tsp fresh chopped oregano
3 eggs beaten
2-3 chickens sectioned

Preheat oven 350F
Spray 2 baking sheets with oil

You need 2 bowls to prep this

Combine dry ingredients in one
Combine wet ingredients in another

Dip chicken in wet mixture
Shake excess and roll in dry mixture-coat well
place on baking sheet & bake aprx 1 hour

Serve warm or cold


Green Chile Bean Dip

INGREDIENTS

16 oz Sun Vista Pinto Beans
1/2 cup New Mexico Frozen Green Chile
1 cup grated sharp cheese
1/8 cup sliced black olives
1/4 cup minced br onion
2 roma tomatoes, diced
8 oz Coyote Trail Old Town Salsa
Salt & pepper

Mix all ingredients in glass bowl

Microwave on med for 8 minutes
Stir, cover and let sit for 5 min

Garnish with sour cream, cilantro, shredded lettuce
Serve with blue corn chips and enjoy
