Ingredients
1 chuck roast, 2-3 pounds, blade cut 1 bottle Coyote Trail Enchilada Sauce
2 teaspoons olive oil 12 ounces dark beer 1 medium onion, sliced 2 cloves garlic, minced 4 carrots, peeled and sliced 4 stalks celery, sliced Salt and pepper roast to taste, heat oil in skillet and sear each side of roast over medium heat. Place roast in crock pot. Deglaze skillet by adding beer and scraping bottom of pan; pour beer mixture into crock pot. Put crock pot on low setting. Add onion, garlic, carrots, celery, and chile sauce. Cook 6 hours on low setting. Serve with oven roasted or mashed potatoes. Serves 6

Cheesy Potatoes
Ingredients
10 white rose potatoes wash and slice thin (peeling optional) NOTE: A mandolin would be helpful for slicing 2 cups grated cheddar cheese 1 can cream of mushroom soup 14 oz 16 oz Coyote Trail Green Chile Sauce
Parsley chopped for garnish 5 green onions sliced
Layer potatoes, add onion and cheese, Coyote Trail Green Chile Sauce and soup to each layer Repeat until dish is full, Top with green onion Option: Add cooked bacon crumbles to top
Cook on low for 4 hours Garnish with parsley
Serve as side dish for 8 People
