Dutch Oven Recipes Make Life Easy!

These recipes represent a different kind of cooking. A strange pan with a funny name, this odd pot has an iron wall and a snug lid. Some are enameled and others are cast iron. The advantage of an enameled dutch oven is that it is easy to clean and it will usually fit well within your cupboard area. Either way, they are an indispensable tool in the kitchen and we have some great Recipes using Coyote Trail Cooking Sauces.


Shrimp Risotto & Green Chile

Dutch Oven recipes taste the best with the secret ingredient. Of course, you need Green Chile in your life and nothing livens up a dutch oven recipe like Coyote Trail products. Check it out!

Ingredients
1 Tblsp Olive oil
1/2 cup grated br onion
1 tsp minced garlic
1 lb cleaned and trimmed med shrimp
2 cups arborio
4 cups chicken stock
Pinch saffron
8 oz Coyote Trail Green Chile Sauce

1/4 cup grated asagio cheese
Salt & pepper to taste

In Dutch Oven

Add olive oil,garlic & onion
Add shrimp mixture and cook 5 minutes, stir often
Remove shrimp to bowl Add arborio rice to Dutch Oven
Add stock 1/2 cup at a time
Go slow-this will take 30 minutes
When stock is gone, add saffron and Green Chile Sauce
Stir and add cheese and cooked shrimp mixture
Cover, let sit 5 minutes
Serve with salad and start howling like a coyote!

Barbecued Salsa Char

I have several dutch oven recipes that I break out and when I'm feeling like my own salsa, this is the one I make.

Ingredients
6 tomatillos
2 red tomatoes
1 sweet onion
3 New Mexico Chiles of choice
1 Jalapeno pepper
3 cloves garlic
1/2 bunch chopped cilantro
Salt & pepper to taste

Grill everything except the cilantro

Remove some of char from searing vegtable skins
Chop and add everything into a Dutch Oven
Cook for 15 minutes on med heat
Cool and serve

Coyote Trail Green Chile Sauce

Orange Chile Turkey Breast

Turkey is easy to cook when you have the right ingredient. Coyote Trail Green Chile Sauce is low in Carbs and tastes great. Bring the flavors of the Southwest to your table. Add this to your Dutch Oven recipes.

Ingredients
2 tsp canola oil
1 1/2 cup orange juice
8 oz Coyote Trail Green Chile Sauce
Salt & pepper
1 tsp dried thyme
3 garlic cloves, minced
3 lb skinless turkey breast

In a Dutch Oven sautee onions & garlic in canola
Add thyme, salt & pepper to taste
Add turkey breast and brown
Add orange juice & Green Chile Sauce
reduce heat and cover
Cook until turkey reaches 160F about 2 hours
Serve with brown rice & a salad


Southwestern Soup is a Favorite

This is another of the delicious Dutch Oven recipes using unique cooking sauces from the southwest. It is the perfect meal for those lazy nights.
Ingredients
2 tsp canola oil
2 garlic cloves, minced
1/2 cup br onion, chopped
1/2 cup New Mexico Green Chile
1/2 lb ground sirloin
Salt & pepper
1/2 cup long grain rice
6 oz Coyote Trail Enchilada Sauce
16 oz canned kidney beans, drained & washed
8 oz canned tomatoes

In a Dutch Oven add canola & saute onions & garlic
Add sirloin, cook until done and drain
Add remaining ingredients
Adjust salt & pepper
Cook on low for 4 hours
Stir and serve
Garnish with more green chile & sour cream
