Ingredients 1 Tblsp Olive oil 1/2 cup grated br onion 1 tsp minced garlic 1 lb cleaned and trimmed med shrimp 2 cups arborio 4 cups chicken stock Pinch saffron 8 oz Coyote Trail Green Chile Sauce
1/4 cup grated asagio cheese Salt & pepper to taste
In Dutch Oven
Add olive oil,garlic & onion Add shrimp mixture and cook 5 minutes, stir often Remove shrimp to bowl Add arborio rice to Dutch Oven Add stock 1/2 cup at a time Go slow-this will take 30 minutes When stock is gone, add saffron and Green Chile Sauce Stir and add cheese and cooked shrimp mixture Cover, let sit 5 minutes Serve with salad and start howling like a coyote!

Barbecued Salsa Char
I have several dutch oven recipes that I break out and when I'm feeling like my own salsa, this is the one I make.
Ingredients 6 tomatillos 2 red tomatoes 1 sweet onion 3 New Mexico Chiles of choice 1 Jalapeno pepper 3 cloves garlic 1/2 bunch chopped cilantro Salt & pepper to taste
Grill everything except the cilantro
Remove some of char from searing vegtable skins Chop and add everything into a Dutch Oven Cook for 15 minutes on med heat Cool and serve

In a Dutch Oven add canola & saute onions & garlic Add sirloin, cook until done and drain Add remaining ingredients Adjust salt & pepper Cook on low for 4 hours Stir and serve Garnish with more green chile & sour cream
