Instead of frying tortillas, messing up the stove and splattering hot oil everywhere, spray them with a good quality cooking oil. You can use olive or vegetable oil and it only takes a few squirts. Why use oil at all? Because if you don't, the tortilla absorbs the sauce too quickly and will turn to mush.
Cook each tortilla, one at a time, in a 9 inch skillet, on med heat for a minute and use tongs to turn the tortilla over. Spray the other side and flip after a minute. The results will amaze you and they're healthier too. The oil acts as a barrier to let the tortilla absorb the sauce gradually. I'm telling you, the ancestors had it figured out!

AKA Howlin' Coyote BeansIngredients 16 oz Coyote Trail Old Town Salsa 2 20 oz cans of Sun Vista Pinto Beans You can also use black beans! 1 cup chicken broth 1/2 cup Bacon chopped (Costco) 1 onion chopped small 2 bay leaves 1/2 tsp. cumin 1 bunch cilantro 16 oz Coyote Trail Green Chile Sauce 1 cup New Mexico Green Chile
In a lg. saute pan saute bacon on low for 15 min. You want it to look crispy but not burnt Add onion and saute for another 10 min Add beans with juice, chicken broth, Green Chile Sauce and spices Adjust heat level Add as much green chile as you can handle
Cook it on a low-med simmer for a half hour stirring often If the liquid starts evaporating add more chicken broth as needed Add a handful of cilantro at the end Top with a few sprigs of cilantro Pass the Old Town Salsa
