Laura's Famous Beans

AKA Howlin' Coyote Beans

Ingredients
16 oz Coyote Trail Old Town Salsa
2 20 oz cans of Sun Vista Pinto Beans
You can also use black beans!
1 cup chicken broth
1/2 cup Bacon chopped (Costco)
1 onion chopped small
2 bay leaves
1/2 tsp. cumin
1 bunch cilantro
16 oz Coyote Trail Green Chile Sauce
1 cup New Mexico Green Chile

In a lg. saute pan saute bacon on low for 15 min.
You want it to look crispy but not burnt
Add onion and saute for another 10 min
Add beans with juice, chicken broth, Green Chile Sauce and spices
Adjust heat level
Add as much green chile as you can handle

Cook it on a low-med simmer for a half hour stirring often
If the liquid starts evaporating add more chicken broth as needed
Add a handful of cilantro at the end
Top with a few sprigs of cilantro
Pass the Old Town Salsa

Chile Glazed Salmon

This is one of those "WOW" dinner ideas that'll make your eyes light up! The green chile should be thawed before using and can be adjusted to the heat level you like.Make more of this glaze and spoon over pasta or chicken. It will refrigerate for 3 days.

Ingredients
6 oz salmon fillet
1 tbsp br sugar
1 tbsp melted butter
1 cup New Mexico Green Chile
6 oz whipping cream
1 shallot minced
1 garlic clove minced
2 tsp olive oil
1/2 cup chicken stock

Make Chile Glaze
In sauce pan add olive oil, shallot, garlic, stock & green chile
Cook on low for 10 minutes
Pour mixture in blender and carefully pulse to puree
Return to saucepan and add cream
Cook on low until thick

Cook Salmon
Spray grill & BBQ salmon skin side down
Turn after 2 minutes and remove skin
Baste with butter br sugar mixture

Plate & spoon glaze over top
Total yum!
