Cooking Mexican Food

Cooking Mexican food can be simple if you have the right ingredients. Stay away from the fat laden dishes because authentic mexican meals are simple and in many cases indigenous to the earth. Look for ingredients like fresh corn, blue corn tortillas and inexpensive cust of meat. Prepared peoperly these ingredients ignite the senses and turn everyday into gourmet.

Coyote Corn Dish

This simple yet delicious food was standard in my household. My grandmother was the chef in the family, but we had no idea that our food was special. I first tasted this delicious corn dish in first grade and have loved it even since. Now, more generations follow. Why not make it part of your family traditions?

INGREDIENTS
1 med brown onion chopped
3 garlic cloves minced
32 oz frozen yellow corn or fresh
4 cups grated cheddar cheese
2 tbsp olive oil
1 bottle Coyote Trail Green Chile Sauce

In heavy pan
sauté onion in olive oil over med heat
When browned, add garlic and corn
Brown corn for several minutes
Use masher to gently break kernels or a meat grinder to mix ingredients together
Drain, transfer to shallow baking dish
Stir in cheese, Green Chile Sauce
Mix well
Bake at 350 for 30 minutes
Serve with favorite entree


Rain Dance Eggs

Mexican food always includes eggs. What is it about red chile and eggs when you're cooking Mexican food? The combination of the two is spectacular.

INGREDIENTS
3 eggs
3 tspn water
1 teaspoon butter
4 ounces Coyote Trail Ranchero Sauce

3 green onions, chopped
1 avocado, sliced
4 oz Monterey Jack cheese, grated

In mixing bowl
scramble eggs & water
In 12-inch ovenproof frying pan
Melt butter, add egg mixture, onion cheese
Cook 3 minutes on medium heat
Transfer frying pan to 350-degree oven and bake for 10 minutes.

Serve with avocado wedges
Top with Ranchero Sauce, heated in microwave.
Serves 2.

Southwest Lasagna

Ingredients

2 cups marinara sauce
1 cup tomato sauce
2 tbsp minced garlic
2 tbsp dried oregano
3 cups cooked chicken
Cooking Spray
1 med br chopped onion
2 cups New Mexico Roasted Green Chile
16 oz grated mozzarella cheese
8 oz grated Cheddar cheese
1 doz corn tortillas

Preheat oven to 350
In a large pan, brown shredded chicken in butter
Add onions, cook until soft
Add garlic, oregano
Add spaghetti & tomato sauce
Reduce heat & simmer 10 minutes

In separate frying pan spray tortillas and "fry" 30 seconds ea side. Learn how to make your tortillas even more healthy
How Do I Do This?

Spray a shallow baking dish and add a layer of tortillas
Add a layer of the chicken w/ sauce
Add a layer of mozzarella cheese
Repeat layers twice, then top with Cheddar cheese
Bake for 30 minutes or until cheese bubbles
