Chicken Enchilada Recipes

Quick & Easy Enchiladas

Nothing can be easier to make than middle of the week enchiladas with a deli chicken and green chile. In fact, many busy parents have renamed this dish School Night Enchiladas.

Sure, we'll show you how to make a traditional chicken enchilada recipe , but if you're in a hurry and want to impress, try this delicious recipe.


School Night Enchiladas

INGREDIENTS
¼ onion, chopped
4-5 tablespoons canola oil
1 dozen corn tortillas
3 cloves garlic, chopped
½ bunch cilantro, divided
1 deli chicken, cooked & shredded
1 jar (16-ounce) of Coyote Trail Green Chile Sauce
2 cups Monterey Jack shredded
4 oz can black olives, sliced
1 roma tomato, chopped small
3 green onions, chopped
In a large frying pan

Saute onion in olive oil
Cut tortillas into chip size triangles and add to saute
Add more oil if necessary to lightly coat all chips
Cook for 10 minutes over med heat
Add chicken
Add garlic and half the cilantro
Use a spatula to carefully turn the mixture
Do Not break up the chips
Add Green Chile Sauce do not boil
Add cheese and mix carefully
Add, depending on preference
olives, tomatoes and onions
Cover and let sit for 10 minutes
Garnish with remaining cilantro

Serves 6

Note- To serve New Mexico stylefry an egg and place on top of each serving


Blue Corn Tortillas

Blue corn tortillas are really good when made into chicken enchiladas. The problem is that they are hard to locate. If you do find them, grab a few dozen because they'll freeze well.

Blue corn is softer than both white and yellow corn and it has a nutty taste that gives enchiladas an earthy taste. Tradition calls for making these delicious tortillas without salt, so in most cases they are healthier for you too.
