Saute onion in olive oil Cut tortillas into chip size triangles and add to saute Add more oil if necessary to lightly coat all chips Cook for 10 minutes over med heat Add chicken Add garlic and half the cilantro Use a spatula to carefully turn the mixture Do Not break up the chips Add Green Chile Sauce do not boil Add cheese and mix carefully Add, depending on preference olives, tomatoes and onions Cover and let sit for 10 minutes Garnish with remaining cilantro
