This is something our ancestors created years ago and these are the flavors we still yearn for. If you want calliflower enchiladas or some other exotic renditions of chicken enchiladas, you'll have to turn the page.

Corn or Flour Enchiladas

Corn tortillas are traditional when it comes to enchiladas, but as our culinary tastebuds evolve we are experimenting with many other types of tortillas. Lately, flour tortillas have taken the stage and grace many tables.

Let's look at calories first. Of course these numbers are not exact because manufactures differ in the ingredients, but they will be close enough to help you to make a decision.

The normal, 6 inch round corn tortilla contains about 45 calories. The same sized flour tortilla contains about 94 calories.


If you decide to use flour tortillas you may opt to use low carb or wheat tortillas. A 6 inch wheat tortilla has about 60 calories.

New on the scene in the past few years are wraps. A Carbwatchers cilantro-jalapeno wrap in the same size we're discussing is about 60 calories and the other flavors are in the same neighborhood.

The answer?

Based on calories, the answer is corn tortillas. They win in the price catagory as well and if you get your hands on homemade corn tortillas, you can't beat the flavor.


The Best Chicken Enchilada Recipe

Start with the sauce. It's the most important ingredient because without it, you have nothing special. You can always change your filling to an authentic cheese enchilada recipe, but the sauce is key. Use the best you can get and if you can't buy the best, make your own enchilada sauce recipe. Authentic Chicken Enchiladas

We're taking a couple shortcuts here, but nothing that will spoil the true experience of this authentic chicken enchilada recipe. I like to get a cooked chicken at Costco and season it my way.

Make sure you don't use fried chicken or canned chicken. If you have the time, stew a whole chicken in a stock pot and add vegetables to make a chicken stock.

INGREDIENTS
3 cups shredded chicken-no skin
8 oz sliced bl olives
1/2 tsp cumin
1/2 tsp oregano flakes
Salt & pepper to taste
1 med onion chopped
1/2 tsp garlic powder
1 bunch cilantro, chopped
16 oz Coyote Trail Enchilada Sauce
12 oz cheddar cheese grated
10 corn tortillas
Cooking Spray

Assemble filling

Mix in bowl the following:
Chicken, olives,cumin,oregano,garlic powder,1/2 onions,1/2 cilantro

Precook tortillas

Tortillas can be cooked in oil or they can be coated with a food spray

Pour 1/4 enchilada sauce in pie tin
Coat both sides tortilla with enchilada sauce
Spoon mixture and smallamount of cheese inside
Roll and place in baking dish, seam down

If you want to freeze your enchiladas now is the time-before sauce and cheese
Repeat until all tortillas are rolled
Pour remaining sauce over top, add cilantro & onions
Bake at 350 F for 20 minutes
Cover five minutes then serve

Options:
Garnish with creme fresh, salsa,vinegar, serve an egg on top

More Choices in Tortillas

Blue Corn is a flour corn that has a soft starch and is becoming popular in products like tortillas, corn chips and pancake mixes. The tortillas have a sweeter taste than others and makes a wonderful enchilada dish because they are denser than yellow corn tortillas.

Blue corn tortillas also have about 20 % more protein than white corn tortillas. They also have less starch and contain antioxidants, which studies show, may help fight colon cancer.

These antioxidants are called anthocyanins, which are also found in red wine and berries. Two of my favorite foods.

Blue Corn Tortillas

Ready to try Blue Corn Enchiladas? This chicken enchilada recipe rocks!

I suggest you add an egg to the top to finish it off and it doesn't matter if it's dinner or breakfast.

A couple things about cooking with blue corn tortillas.

First they are very dense, so rolling them is going to be tough. I suggest you layer your enchiladas, like they do in New Mexico.

I also suggest that you dip them in hot oil instead of using cooking spray. These tortillas are more dense than corn tortillas.

Get a large baking dish and prepare your assembly line in advance. Open 1 bottle of Coyote Trail Enchilada Sauce for every dozen tortillas. This is cutting it close.

Also decide on how many layers you want. One dozen tortillas will fill a rectangular pan measuring 9 x 13 with 2-3 layers. A pyrex 10 in round pie plate is perfect for two people and 8 tortillas. You;ll get 4 layers.

The more layers, the more sauce you're going to need because they dry out in the oven.

Blue Corn Chicken Enchiladas

INGREDIENTS
3 cups shredded chicken-deli chicken
8 oz sliced bl olives
1/2 tsp cumin
1/2 tsp oregano flakes
Salt & pepper to taste
1 med onion chopped
1/2 tsp garlic powder
1 bunch cilantro, chopped
16 oz Coyote Trail Enchilada Sauce
12 oz cheddar cheese grated
12 blue corn tortillas

Assemble filling

Mix in bowl the following:
Chicken, olives,cumin,oregano,garlic powder,1/2 onions,1/2 cilantro

Precook tortillas in canola

Set on paper towel to drain
Coat ea tortilla completely in Enchilada Sauce

Spray dish and layer starting with tortillas
Add other ingredients from bowl
Spread contents of bowl evenly before adding next layer of tortilla
Add cheese on top of filling, drizzle with sauce
Finish the stack with more sauce, cheese and balance of ingredients
You want more cheese on top for presentation

Bake at 350 F for 20 minutes covered
Uncover and cook for 10 minutes more

Garnish with egg or sour cream-not both
