In large skillet add canola and onions, cook until soft On low heat, add oregano, salt & pepper to taste
In a pie pan add 2 oz Coyote Trail Enchilada Sauce Coat both sides tortilla Add pinch of cheese and spoonful of onion mixture to center Fold and lay seam side down on baking dish Add more sauce to pie pan and repeat with remaining tortillas Add 1/2 cup over filled tortillas and sprinkle on remaining cheese Bake at 350 F for twenty minutes

You're ready with a great cheese enchilada recipe. But there is no sense laying out an assembly line to make a single pan of enchiladas. If you use a foil 1/2 size steam table pan you will get eight rolled enchiladas into a pan. This is the perfect sized pan because it will fit in most freezers and it goes right into the oven. In the state of New Mexico, enchiladas are stacked. One upon the other with rich red sauce running with melted cheese separated by corn tortillas. You can spray the tortillas or you can fry them in oil. Either method forms a barrier to prevent the tortillas from getting mushy.
