In a 9 in frying pan add onion,garlic & ground beef Brown on med heat and drain when cooked Add cilantro,cumin,paprika,tomato paste,chile powder,Green Chile Sauce Cover and cook on low for 15 minutes Remove lid and cook for another 5 minutes

Make sure you marinate this meat 12 hours before using it and once you cook it,cut it across the grain on a bias. 2 lbs Flank Steak 1/2 cup pineapple juice 1/2 cup orange juice 2 garlic cloves minced 1/2 tsp cumin 1/4 tsp tyme 1 large br onion, thinly sliced 1 tsp canola oil 2 tbsp Dijon mustard 1/8 cup soy sauce Salt and pepper to taste 2 tsp paprika 1 tsp celery salt 2 tblsp Red Chile Powder
Add everything to glass bowl Marinate meat for twelve hours-save marinade Barbeque steak to rare Cut on bias, then into small strips Place in saute pan, add remaining marinade Cook on low until sauce thickens Do not burn sauce

1 lb Carne asada per person Juice from 5 limes 12 oz Coyote Trail Garlic Chile Marinade 3 tsp New Mexico Red Chile Powder Pinch cumin 3 med onions, sliced 12 green onions, halved Salt & pepper to taste

3 lb pot roast-chuck or clod 6 garlic cloves left whole Salt & pepper to taste 1/2 tsp cumin 1/2 tsp oregano 1/2 tsp paprika 4 tbl New Mexico Red Chile Powder 8 oz z Coyote Trail Enchilada Sauce
Trim fat & rub roast with dry ingredients Use a knife to slit slots in beef and insert garlic
Place in slow cooker, add Enchilada Sauce Cook 8-10 hrs on low Remove to cool, save juices Can be refrigerated overnight Use 2 forks to shred meat Add liquid to saute pan, reduce by half Pour over shredded meat & serve
