Get The Right Tortilla

You have several choices when considering a beef taco recipe and tortillas are an important choice. The way you cook them is also important to the taste and to your health. Tradition allows for a pair of small corn tortillas dipped in hot oil and cooked quickly on a comal. A what?

A comal is a round piece of 1/4 inch steel plate that sits on the open burner for the purpose of cooking tortillas. This kitchen necessity is passed to each generation and is never allowed to go into the dishwasher. The American version of a comal is a trivet.

Your choices for tortillas will range from white corn, yellow corn and blue corn. Interested in the exotic blue corn? You can read more about making enchiladas and Blue Corn Tortillas HERE
