Authentic Enchiladas

If you want to make homemade, authentic beef enchiladas you have to do a couple of things. First, get the right sauce. If you don't use ours, make your own.

Second, decide on the filling. If you want beef enchiladas, will it be ground beef, cut beef or shredded beef?

How much time do you have? Ground Beef is simple and a quality sirloin for cut beef is easily and quickly accomplished, but shredded beef will take some time.

Whatever you do, drain the meat thoroughly before you use it in the enchiladas. Otherwise you'll have soggy enchiladas.

Ground Beef

Use at least 15% fat because you do not want a lean ground beef in your beef enchilada recipes. Saute 1 1/2 lbs per dozen enchiladas.

Cut Beef

A sirloin steak is perfect for this version of Beef Enchilada Recipes. Slice the sirloin-against the grain-into strips that are 1/2 inch square and about 2 inches long. Saute 2 lbs for a dozen enchiladas.

Shredded Beef

You'll need either a pressure cooker or a crock pot to cook a beef roast long enough to shred. I suggest a clod roast or a chuck roast. Get one that is 3-4 lbs. because there is no use trying to find a smaller one. Extra meat can be used for tacos.


How Do I Make The Filling?

Ground Beef

This is what you expect to find in most Mexican restaurants, but many times the flavor is lacking. Take your time and cook the beef slowly and don't forget to add the New Mexico Chile Powder.

INGREDIENTS

1 1/2 lbs of 15-20% ground beef
1 garlic clove minced
1/2 br onion chopped
1/2 tsp salt
1/2 tsp cumin
1/2 tsp oregano
6 sprigs cilantro chopped
2 tspn New Mexico Red Chile Powder

SAUTE All Ingredients

in med sized pan for 20 minutes or until meat is no linger pink
Make sure beef is not clumped
Drain, but retain pieces of garlic and onion
Let cool until you're ready. Refrigerate for 2 days is ok



Cut Beef

Slice a sirloin steak across the grain. The reason for this is because when you bite into the meat, you want the shortest section to be able to "break off" easily. If you slice it with the grain, the meat will appear stringy and chewy. Not good.

INGREDIENTS

1/2 tsp olive oil
2 lbs sliced sirloin 1/2 in square x 2 in long
1/2 br onion chopped
1/4 cup beef stock
1/2 tsp ground pepper
1/2 tsp cumin
1/2 tsp oregano
2 tspn New Mexico Red Chile Powder


SAUTE onion in olive oil until soft

Add garlic, beef
Add everything else and cook uncovered on low for 30 minutes
Let cool and drain, keeping onion and garlic pieces
Refrigerate for 2 days is ok



Shredded Beef

An authentic way to prepare beef enchilada recipes is with shredded beef. This delicious meat is both time consuming and well worth it. Your family and guests will notice the difference and will be sure to comment on the extra work you've gone to.

INGREDIENTS

3-4 lb chuck roast
8 cloves garlic
1 med onion, chopped
2 tsp oragano
1 tsp cumin
1/4 cup beef stock
Salt & pepper to taste
4 tspn New Mexico Red Chile Powder


WITH a sharp knife slit roast and insert whole garlic cloves
Add all ingredients to a crock pot or slow cooker
Cook on low for 8 hours
Remove & cool,gather all onions & garlic

Using 2 forks, shred beef into small pieces
Use knife if necessary to keep beef small
Combine with onion, garlic and chill 2 days ok

Enchiladas Coyote Style

Spray ten corn tortillas then heat them quickly in a saute pan. Why?
Because tortillas will absorb too much sauce if they are not either sprayed or dipped in hot oil. Spraying them is healthier and easier to clean up.

Set them on a paper towle stack to rest and stay warm while you gather the remaining ingredients.


Old World Beef Enchiladas

To put this beef enchilada recipe together, start an assembly line with the following ingredients

10 pre cooked corn tortillas (above)
12 oz cheddar cheese
1 med onion, chopped
1 bunch cilantro, chopped
3 cups Meat filling (above)
16 oz Coyote Trail Enchilada Sauce
This will make 10 enchiladas

Pour 1/2 cup of enchilada sauce in pie tin
Coat both sides tortilla with enchilada sauce
Spoon mixture and small amount of cheese inside ea tortilla
Roll and place in baking dish, seam down

If you want to freeze your enchiladas now is the time-before sauce and cheese

Repeat until all tortillas are rolled
Pour remaining sauce over top, add cilantro & onions
Bake at 350 F for 20 minutes

Cover five minutes then serve

Options-Garnish with creme fresh, olives,salsa,vinegar, serve an egg on top


Keep The Family Close
