Authentic Mexican Food Recipe

Chile Verde
Chile Verde literally means "green chile". It is traditionally made by cutting pork butt into small bite-sized pieces and simmering in a green chile sauce. In New Mexico, the addition of potatoes makes this dish a hearty stew. From Mexico, it's the filling of burritos. I'm going to show you how to make this authentic dish in no time at all. It'll be easy when you have the right ingredients.
INGREDIENTS 6 thick sliced pork chops or pork butt 3 garlic cloves minced 1 med onion, chopped 3 tbs canola Salt & pepper to taste 2 bottles Coyote Trail Green Chile Sauce
Cut pork to bite-sized pieces Salt & pepper to taste Add oil to skillet Brown onion, then garlic remove to large bowl Add pork to skillet and brown Do not crowd-cook 1/2 way Remove to same large bowl
Drain & add contents of bowl to Dutch Oven Add Green Chile Sauce Cover & cook for 2 hours Cook on low-do not burn Serve with beans, rice, tortillas
Chile Con Carne
In New Mexico, red chile with pork is called Carne Adovada. In Mexico it is called Chile Colorado or Chile Con Carne and is made with either beef or pork.Traditionally the meat is "cured" in the sauce overnight, but with the right chile, this becomes moot because the chile you're going to use doesn't need to rest overnight. The important thing about red chile sauce is to cook it long enough to cook all the graininess out. We've already done that for you.
