When the whether starts to get colder my enchilada cravings start. It could be the fact that a piping hot pan of enchiladas are the quinessential comfort food.

I don't know. Maybe it's the red chile because this time of year I really want to eat red chile. When April rolls around, the green chile cravings start up, but right now give me the red!

We just harvested the green crop and the red isn't far behind. When the pods mature, we'll destem and remove the seeds before crushing the red chiles into a fine powder. This silky smooth red chile powder is what red chile enthusiasts look forward to and to get some in your kitchen is worth the wait.

Chile Verde
