First, let's talk a little chile.

The green chile season is in full swing. We were concerned because southern New Mexico was under water for a while and the perilous chile crop was on everybody's mind. No more fears. We're picking.

Soon, on street corners everywhere, roasters will be set up and like french perfume, the scent of charred green chile will linger in the air .

This is the real chile from Hatch, New Mexico. The same green chile we use in our award winning sauces.


The Answer is Green Chile

Recently the question came from a customer about ulcers and the posibility that Green Chile was the cause.

I checked with New Mexico State University and of course they had the answer.

According to them, studies in both Brazil and Thailand, where chiles of all sorts are used in cooking, no higher occurances of ulcers were found among their patients. There's more to the study, but the answer is still no.

New Mexico Salsa

We just finished bottling the new Old Town Salsa and I'm very impressed. A combination of red and green chiles, this absolutely exemplifies New Mexico flavors.

This year's chile is hotter than in previous years, but I think it marries very well with food. The stores don't have any yet and if you can't wait, you can order it HERE



Chile Glazed Salmon

Hatch Chile Festival

Each year over the Labor day weekend, the village of Hatch, New Mexico is host to the Hatch Chile Festival.

That's because Hatch is considered to be the Chile Capital of the World. Thousands and thousands of people attend this event and later in the month Las Cruces joins the fun with the Whole Enchilada festival.

Of course, they feature the World's Largest Enchilada. A great time. Read more about it RIGHT HERE


Speaking of Enchiladas

We just bottled the new season version of our famous Coyote Trail Enchilada Sauce and boy oh boy is it good.

The red chile from Hatch is superb. It is silky smooth and contains absolutely no stems and no seeds (reminds me of Cheech and Chong from years back)

You might remember a couple years back when New Mexico Chile Company won a very prestigious award for the Best Red Chile in the state.

Just when I thought it couldn't get any better, it has.
