Why do Coyote Trail Sauces taste so unique?
Our philosophy is simple. We manufacture sauces that marry well with food and use New Mexico Chiles as the base of all our sauces.
Why aren't your sauces hotter?
Although our sauces are excellent by themselves, we are not in the condiment business and don't really want to compete in that market. There are a number of hot sauces out there, but you can't necessarily cook with them.
What are those black specs in my bottle?
We use fire roasted chiles in many of our sauces and this leaves skin char, which adds flavor. Some companies steam their chiles, a simpler, less expensive process to remove the skin from chiles.
Last time I bought Coyote Trail Enchilada Sauce it wasn't as hot as it is this time. What's up?
We are at the mercy of nature. Although we try to keep the heat levels consistent, every season is different and yields different chiles. In fact, on a single chile plant you will find a vast range of heat levels.
What is that crunch I taste in the Adovada Sauce?
This is a chile flake called Chile Caribe. We make the Coyote Trail Adovada Sauce in the traditional manner, using both a fine powder and the caribe.
How long will Coyote Trail Sauces last?
Once opened they must be refrigerated. The Garlic Chile Marinade will last about 4 weeks and the other sauces should be used in 2 weeks. Unopened, they have a shelf life of 3 years under normal house hold conditions.
How do I store the Green Chile Powder?
Dry powder should be kept in a zip lock baggie and stored in the pantry, in a dark cool area.
I made Santa Fe Chicken and it tastes nothing like I tasted it at the Fiery Foods Show. What happened?
Remember to drain the chicken before you add the Green Chile Sauce. Otherwise you are just creating gravy. You may also try grilling the chicken instead of cooking it on the stove.
Why can't I find Coyote Trail in the stores?
Although we sell to some of the larger chains, distribution is out of our control. It is the primary reason we decided to sell at the same prices online. It's simpler and our customers are usually guaranteed availability.
What if I get a box of sauces that is leaking?
Although we take care to package our products very carefully, the carriers sometimes kick the boxes around. If you receive broken bottles, throw them away and contact us for an immediate replacement. If a lid is ajar or the seal is broken, toss the bottle and contact us for a replacement.
I got some frozen chile and it sat on my doorstep for a few hours. I opened it and it's still frozen, but not as hard as it should be. What should I do?
Frozen chile is fine even frozen a second time. Put the bag in the freezer and enjoy it.
I got a box of your product in the mail and it was from California. I thought you were in New Mexico.

I make a great chile chicken casserole. How do I submit a recipe?

I sent a recipe for baked beans with Ranchero Sauce, but I don't see it on the website. Why not?
First of all, thank you for your submission. We get hundreds of recipes and although most are very good, many don't fit the Coyote Trail profile, which is quick and easy. We realize people are busy and don't have a lot of time to cook, so our gourmet sauces are made to assist in making everyday gourmet. Keep submitting.
What happened to the Barbeque Slather. I love that stuff.

I love your Christmas Salsa but I can't find it anywhere. What's the deal?
We make this awesome salsa in the Fall when red chiles become available. By January it's usually sold out. Old Town Salsa is the same recipe and is available year round.
I like my chile hotter. Can you make yours that way?
The Green Hot Sauce is the hottest product we make. The other sauces are made to marry well with food. I personally like my chile hotter too, but the vast majority of our customers can not tolerate any more heat. Try adding some red or green chile powder.
