This is why, in 1999, I started New Mexico Chile Company. My goal was to produce great food at reasonable prices. I wanted to make everyday gourmet by simply opening a bottle of something spectacular. I wanted a bottle of low-fat liquid gold that I could pour over chicken or brush on a steak. I was dreaming of gourmet 30 minute meals.

I needed something red. My senses demanded this flavor, so I had to create something. That's when I created an Enchilada Sauce that soon became a best seller.
